“In the past 40 years, the so-called Food Pairing Theory development in China has been fully driven by imported liquor-brand owners/dominators. However, such brand-driven food paring theory do has considerable distance from the actual dining experience in Chinese people's daily life.
Therefore, as being a whisky lover since my college days, I now decided to invite another 31 gourmet-whisky lovers from 13 provinces (including 8 different regions/cuisines) to run local studies on the underlying theory toward flavor-structure matching for Whisky Pairing with different Chinese cuisines.
We hope that the native Chinese palate could lead us to explore a more suitable way of whisky pairing for Chinese people in different regions that are based on local cuisine's taste approach.
This one and a half years of in-depth discussion and cuisine-whisky-tasting practice will be effectively combined with the empirical theory of whisky characteristics, cask types, and cask-finished evolution. At the end of this consumer-driven study, we will select a representative city in China to share the group viewing toward its interesting research subject. ”
